A nutritionist has shared her recipe for a 'healthier' cookies and cream ice cream slice that's easy to make and perfect for summer. 

Sydney mum, Rebecca Gawthorne, known as online Nourish Naturally says her slice is 'packed with wholesome ingredients' and features a twist on classic flavours. 

Rebecca begins making the base by placing one cup of almond meal and half a cup of oats or almond flour into a food processor.

She then adds three tablespoons of cacao powder and two table spoons of yoghurt to the flour mixture.

Next the nutritionist adds six pitted dates to the food processor that she'd previously softened in boiling water for five to 10 minutes and then drained.

She blends the mixture in a food processor until combined and the presses it into a lined baking tin to set aside.

To make the ice cream layer she adds one cup of soaked sunflower seeds, one cup of yoghurt, a quarter cup of coconut oil and four teaspoons of vanilla extract to a blender.

She then blends till the cream is smooth and mixes through half a cup of either cacao nibs or dark chocolate.

Rebecca pours the cream mixture over the base and places it into the freezer for at least four hours to set.

Once set she slices it into 12 pieces and lets it thaw for five minutes before serving. 

Her recipe received instant love from followers as many commented on how delicious the tasty treat looks and that they'd give the recipe a try.
