I've never seen a Hitchcock movie. Where to start?

If you just want to cherry-pick, the first reply in this thread, or Vertigo.
 
I would say the Birds, only because it freaked me out so much as a kid. No real reason other than that.

Try out several youtube videos by Every Frame a Painting and Nerdwriter.

One of Hitchcock's laments was disappointing narrative storytelling, which I feel is somewhat of an "old man" perspective on what's happened in film. With the convenience of digital video, narrative storytelling these days tends to gravitate towards the Malickian "moody" narrative, which feels less concrete. Audiences grasp today's films by feel and atmosphere, while their details are stylistically blurred. By comparison the Hitchcockian narrative might seem stagey or even overly choreographed. Or missed altogether.

Being able to appreciate purposeful filmmaking is often helped by these tribute essays, to more deeply understand what's happening onscreen.
 
Psycho is probably a good start. Vertigo is brilliant but it has long periods where nothing much is happening, which could be a bit jarring if you're used to modern movies only.
 
one of my favorite movies of all time is rear window.

really all of his works are great.
 
Beyond the classics..

Spellbound has a great dream sequence that was done by Salvador Dali.

Rope is a cool conceptual film, i think it only has two or three edits...its supposed to be one long uninterrupted shot.

He also has a handful of cool short films and I unfortunately don't remember any of the names. I found a DVD collection of his short films a while ago (since lost) and I remember many being enjoyable to watch.
 
LOVE Hitchcock! Check out the series. All of the suggestions above are note worthy and truly great cinema. In fact, Psycho is actually scary (old timey scary).
 
I'm a big Hitchcock Fan, but The Birds really doesn't hold up with age.

I really enjoyed his television series. Always looked forward to the opening. This one shows what filming was like in the early days.
 
I think Psycho is probably the most famous Hitchcock film so...
 
I only really liked Psycho.
